We learned about new techniques that are unlocking unique tasting notes. We explored the different areas of Brazil and were immersed in the ways coffee is grown in the country. We left inspired by the passion and innovation that so many farmers bring to their work every single day.

Connecting With Roasters and Exporters

Our conversations did not stop at the farm. Roasters and exporters were out in full force at the São Paulo Coffee Festival, and we had the opportunity to deepen our knowledge of how beans are transformed, transported, and prepared for consumption.

We were able to exchange ideas with some of the most respected roasters in Brazil. Luiz, from La siesta34 São Bento do Sapucaí was gracious enough to do an Instagram live with us where we discussed many different topics. These discussions covered roast profiling, green bean grading, quality control, and the subtle adjustments that can elevate a roast from good to incredible. Another great discussion was with Jozeane Santos, who is located in Minas Gerais. She told us of the anaerobic process, which is a method where coffee cherries are fermented with little to no oxygen. This results in some very distinct flavor profiles and was very educational for us.

We also talked to experts in packaging and exportation who are solving real-world challenges around preservation and shipping. Whether it is new vacuum-sealing techniques or advancements in moisture control, these innovations help ensure that when you open a bag of Brewed Monday Coffee, it tastes exactly the way it was meant to.
